Pasta with Calamari, Shrimp, and Nduja

A flavor-packed pasta dish with tender calamari, succulent shrimp, and spicy 'nduja in a fresh tomato sauce.

- Clean the shrimp: remove head, shell, and vein. Clean the calamari: remove innards and cut into strips. Cut the shrimp into pieces.
- Prepare a sauté in a pan with plenty of olive oil, two lightly crushed garlic cloves in their skins, a sprig of parsley, and chili. Fry gently.
- Add calamari and shrimp and sear for 2-3 minutes, seasoning with salt and pepper.
- Add a piece of 'nduja, broken into bits, and let it melt over low heat.
- In another pan, heat a drizzle of olive oil and add hand-crushed cherry tomatoes. Caramelize for 5 minutes over high heat.
- Combine the seafood mixture with the tomatoes. Grate some lemon zest over.
- Cook the pasta in salted boiling water. When almost al dente, drain and transfer to the pan with the sauce, adding a ladle of pasta water. Finish cooking.
- Toss off the heat with chopped parsley, more lemon zest, and a drizzle of raw olive oil. Serve.
