A quick and delicious toasted sandwich with melted Brie, smoky Speck, and a tangy cocktail sauce.

Ingredients

- Olive Oilfor brushing
- Briesliced
- Specksliced thin
- Salsa Cocktailhomemade, from the recipe above
Method
- Slice the bread loaf in half lengthwise. Brush the cut sides with olive oil.
- Toast the bread in the oven until lightly golden.
- Place slices of Brie on one half and slices of Speck on the other.
- Grill under the broiler until the Brie melts and the Speck is warm.
- Spread cocktail sauce generously on the Speck side.
- Close the sandwich and slice as desired.
