A quick and delicious panino made with leftover grilled vegetables and chicken breast marinated in balsamic vinegar and honey, then assembled with a crispy bread roll, fresh salad, and a touch of parsley oil. Perfect for using up fridge leftovers.

- Chicken BreastOne chicken breast, preferably leftover
- Balsamic VinegarFor marinade and dressing
- HoneyFor the marinade
- RosemaryFresh or dried
- Garlic2-3 cloves, for rubbing bread, sauce, and vegetables
- Extra Virgin Olive OilExtra virgin olive oil, for cooking and dressing
- ThymeFresh or dried thyme
- SaltTo taste
- Black PepperFreshly ground, to taste
- Butter(optional) — A knob for the potatoes
- Onion(optional) — Optional, for potatoes
- InsalatinaMixed salad greens
- OreganoDried oregano
- ParsleyFor parsley oil (or substitute pesto)
Method
- Cut the bread loaf in half and toast it on a griddle with a little salt and herbs, then rub with garlic.
- Reheat the grilled vegetables (eggplants, peppers, potatoes) in a pan with olive oil, garlic, thyme, salt, and pepper.
- In another pan, marinate the chicken breast with balsamic vinegar, honey, and rosemary, then cook until done.
- Prepare a sauce by mixing balsamic vinegar with minced garlic.
- Spread the sauce on the toasted bread halves.
- Layer the reheated vegetables (eggplants, peppers, potatoes) onto the bottom half of the bread.
- Slice the cooked chicken breast and place it on top of the vegetables.
- Add fresh salad greens, a drizzle of balsamic vinegar, olive oil, salt, and oregano.
- Close the panino with the top half of the bread and press gently to compact.
- Cut the panino in half with a serrated knife.
- Brush the top crust with parsley oil (or pesto) for extra flavor.
