Christmas Pandoramisù

A Christmas twist on classic tiramisù, made with pandoro (Italian sweet bread) instead of ladyfingers. Layers of creamy mascarpone custard, toasted pandoro soaked in coffee, finished with a dusting of cocoa powder. A festive and indulgent dessert.

Ingredients
6 items- 4 pcsEgg Yolks
- 80 gSugar
- 500 gMascarpone
- PandoroOne whole pandoro, cut into slices
- CoffeeEnough to soak the pandoro; use espresso or strong coffee
- Cocoa PowderFor dusting
Method
- Prepare the mascarpone cream: whisk 4 egg yolks with 80 g sugar in a heatproof bowl. Place over a pan of simmering water (bain-marie) and heat, whisking constantly, until the mixture reaches 65°C (149°F). Remove from heat.
- Gradually incorporate 500 g mascarpone into the yolk mixture, stirring gently until smooth and creamy.
- Cut the pandoro into slices, then into rectangular pieces (roughly the same shape). Place on a baking sheet and toast in a preheated oven until golden and crispy.
- Spread a layer of mascarpone cream on the bottom of a serving dish.
- Arrange a layer of toasted pandoro pieces over the cream. Soak the pandoro thoroughly with coffee (dip or brush).
- Add another layer of mascarpone cream on top. Repeat layers (cream, pandoro soaked in coffee, cream) as desired.
- Finish with a final layer of cream and dust generously with cocoa powder. Refrigerate for at least 2 hours before serving.
