Paccheri with Cotechino Ragu

A festive first course: paccheri pasta with a rich ragù made from cotechino sausage, perfect for Christmas and special occasions.

Ingredients
12 items- Cotechinoboiled and skinned
- Chili Pepperfresh chili pepper, to taste
- 1 pcsGarlicone clove
- Rosemarya sprig or a few leaves
- Celerya rib, diced
- Carrotone carrot, diced
- Onionhalf or one onion, diced
- Red Winea splash for deglazing
- Tomato Passatatomato purée, enough to cover the ragù
- Paccheripasta, about 80-100g per serving
- Grana Padanograted, to taste
- Olive Oilextra virgin, for sautéing
Method
- Dice the boiled and skinned cotechino into small cubes.
- Slice the chili pepper into rings.
- Heat a pan with oil, then sauté garlic, chili, and rosemary for a few minutes.
- Dice celery, carrot, and onion into small cubes; add the onion last.
- Add the diced cotechino to the pan and brown over high heat.
- Add the diced vegetables and let them wilt for about 5 minutes.
- Deglaze with red wine and let the alcohol evaporate.
- Add tomato passata, remove the garlic clove, cover, and let cook for 30 minutes.
- Cook the paccheri in salted boiling water until al dente.
- Drain the paccheri directly into the pan with the ragù, adding a little pasta cooking water if needed.
- Mix well, then sprinkle with grated Grana Padano cheese.
- Serve immediately.
