A soft and creamy Italian-style omelette, made with eggs, Parmesan, and a touch of cream, cooked gently in butter. Chef Roberto Di Pinto shows two styles: one folded with prosciutto and one flipped for a classic finish.

Method
- Crack 3 eggs into a bowl and add a pinch of salt, some grated Parmesan, and a drop of cream.
- Beat the eggs until well combined.
- Melt a knob of butter in a nonstick pan over low heat.
- Pour in the eggs and cook gently without stirring, only swirling the pan occasionally.
- For the first style: when the omelette is almost set, lay a slice of prosciutto on top, fold it over, and slide onto a plate.
- For the second style: when the eggs just begin to set, tilt the pan and slide the omelette to one edge, then flip it over to cook the other side briefly.
- Slide onto a plate and serve immediately.
