A classic French bistro dish: mussels cooked in a creamy sauce with shallots, white wine, and fresh cream. A controversial yet delicious recipe.

9 items- 400 gMussels
- Butter
- 50 mlWhite Wine
- 100 mlFresh Cream
- 1 pcsShallot
- Salt
- Black Pepper
- Prezzemolo Riccio
- Chili Pepper(optional) — optional
Method
- Clean the mussels by removing the beard and scrubbing them under running water.
- Finely chop the shallot.
- In a pan, heat olive oil and a knob of butter over medium heat.
- Add a sprig of curly parsley and stir.
- Add the chopped shallot and a pinch of chili pepper (optional). Sauté until golden.
- Add the mussels, season with salt and black pepper, and toss.
- Deglaze with white wine, cover, and cook for about 2 minutes until mussels open.
- Remove the mussels with a slotted spoon and set aside.
- Add fresh cream (about 100 ml, high fat content) to the pan liquid and simmer briefly.
- Return the mussels to the pan, stir, and cook for another 2 minutes.
- Serve immediately with the creamy sauce.
