A good minestrone can be a creative and original recipe. It's also a leftover-friendly dish. Here is my smoky vegetable minestrone with tomato-basil elixir.

- OnionWhole onion, sliced or diced
- Celery
- Carrots
- ZucchiniDiced
- TomatoFresh, diced
- PotatoesRinsed in water to remove starch
- Basil2 leaves
- ParsleyA few pieces
- SaltTo taste
- Vegetable BrothHomemade vegetable broth
- LeeksSmall leeks, for grilling
- InvidiaEndive, for grilling
- Cherry TomatoesCherry tomatoes, for grilling
- Scalogno MarinatoMarinated shallot
- Elisir di Pomodoro al BasilicoTomato-basil elixir
Method
- In a pot, heat a drizzle of extra virgin olive oil.
- Add the onion and sweat it (do not brown).
- Add the celery and carrots, continue sweating.
- Add diced zucchini and a little tomato.
- Add the potatoes, which have been rinsed in water to remove starch.
- Add two basil leaves and a few pieces of parsley.
- Add a pinch of salt.
- Pour in the vegetable broth and cook (using the boiling function if available).
- Meanwhile, grill leeks, endive, and cherry tomatoes on a griddle with a little oil and salt.
- To serve, place the cooked minestrone vegetables in a bowl and add some broth.
- Top with the grilled vegetables.
- Add some marinated shallot.
- Drizzle with the tomato-basil elixir.
