A comforting winter soup made with mixed dried legumes and ditalini pasta, enriched with a soffritto of celery, carrot, and onion, and seasoned with sage. Perfect for cold evenings.

Ingredients
8 items- 300 gLegumi Misti Secchipre-soaked overnight
- 240 gDitalini
- Trito di Sedano, Carota e Cipollato taste
- Sagea few leaves, chopped
- Extra Virgin Olive Oilto taste
- Saltto taste
- Pepperto taste
- Formaggio Grattugiato a Piacere(optional) — e.g., Parmesan, to taste
Method
- In a pan, sauté a mixture of celery, carrot, and onion together with plenty of chopped sage.
- Add the pre-soaked mixed legumes and cover with plenty of water.
- Cook for about 1 hour and 30 minutes.
- Season with salt and pepper, then add the ditalini pasta.
- Cook, stirring occasionally, for about 10 minutes.
- Finish with a drizzle of olive oil, pepper, and grated cheese to taste.
