Method

  1. Start cold: add abundant garlic oil to a pot and place over heat. Sauté until fragrant.
  2. Add the soffritto (celery, carrots, onions, garlic) and sauté until the vegetables release aroma.
  3. Add the potatoes and cook until they become translucent.
  4. Pour in the seafood broth (made from soup fish and shellfish) and cook the potatoes for 20 minutes, allowing them to absorb the sea flavor.
  5. Cook the Mesca Francesca pasta in boiling water for 4 minutes, then drain and add to the potato mixture. Continue cooking for 4 more minutes.
  6. Meanwhile, prepare the raw seafood mix: combine fish (ombrina), shellfish (mussels, clams, octopus, squid, razor clams, shrimp) with lemon zest, parsley oil, basil oil, and lemon juice. Let marinate for about 10–15 minutes.
  7. Place a serving pot or plate; add the pasta and potato base.
  8. Top with the raw seafood mix, candied lemon slices, and sea fennel.
  9. Finish with a dollop of shrimp head mayonnaise (made without eggs, using lecithin from shrimp heads).
  10. Serve directly from the pot at the table.
