Maltagliati with Shrimp and Zucchini

A quick and fresh first course made with homemade maltagliati pasta, seared shrimp, and marinated zucchini with raspberry vinegar. All cooked in one pan for easy cleanup.

Ingredients

- Garlicfor the zucchini
- Mintfor the zucchini
- Zucchinisliced and marinated
- Raspberry Vinegarfor marinating the zucchini
- Saltto taste
- Pepperto taste
- Shrimpraw, peeled
- Extra Virgin Olive Oilextra virgin olive oil, as needed
- Rosemaryfresh sprig, for the shrimp
- Chili Pepperdried chili pepper, for the shrimp
- Oregano(optional) — or dried wild fennel (finocchietto selvatico essiccato)
- Parsleyfresh, chopped
- Pecorinograted, for serving
Method
- Bring salted water to a boil for the pasta.
- Slice zucchini and cook in a pan with garlic and mint until slightly charred.
- Wrap the zucchini in a cloth to dry, then season with raspberry vinegar, salt, and pepper; let marinate.
- Cut the tagliatelle into irregular pieces to make maltagliati.
- In a pan, heat a drizzle of oil with rosemary and chili pepper, then add shrimp and sear. Season with salt. Remove shrimp and cut into pieces.
- Add more oil and oregano or dried wild fennel to the shrimp; let marinate.
- Cook the maltagliati in the boiling water.
- Reserve some pasta water and add it to a pan with oil and parsley.
- Add the shrimp and then the maltagliati to the pan; toss together.
- Grate pecorino cheese over the top.
- Plate: arrange the maltagliati, top with the marinated zucchini, more grated pecorino, a bit of green (parsley), and a drizzle of olive oil.
