Method
- Crack the eggs into a bowl and beat them.
- Add milk, rum, and vanilla extract to the eggs and mix.
- Add sugar, salt, and flour, then whisk until you get a slow, not too stiff batter.
- Heat a pan and melt butter in it.
- Pour the batter into the pan and cover with a lid. Cook for 3-4 minutes.
- Remove the lid and cut the pancake into four quarters using a non-stick spatula.
- Flip each quarter to brown the other side.
- Sprinkle granulated sugar over the pancake to caramelize.
- Using the spatula, cut the pancake into small pieces and let them brown evenly.
- Serve the Kaiserschmarren hot, dusted with powdered sugar and accompanied by blueberry jam.
