A vibrant Italian salad with radicchio, lettuce, Tropea onion, anchovies, boiled egg, peas, and fried capers, dressed in a perfumed oil infused with Rwandan pepper and Sicilian herbs.

Method

  1. Prepare the dressing: in a bowl combine Rwandan black pepper, dried aromatic herbs (sage and thyme), smoked extra virgin olive oil, and Umbrian extra virgin olive oil. Let it infuse for at least 10 minutes or up to half a day.
  2. Clean the red field radicchio: wash it well, keeping the root on. Set aside.
  3. Take some first-cut radicchio, remove the stem, and tear 2–3 leaves. Drop them from a height to keep them crisp.
  4. Wash the curly lettuce, remove the heart, and cut into pieces.
  5. Add some green corrosi lettuce (or mixed greens). Toss everything together.
  6. Slice a Tropea onion lengthwise into thick pieces.
  7. Finely chop 3–4 anchovy fillets.
  8. Boil an egg for 9 minutes, peel it, separate the yolk from the white, and chop both separately.
  9. In a bowl, combine the chopped anchovies and egg yolk. Add the infused herb oil and mix well.
  10. Blanch the peas in boiling water for 30 seconds, then peel them. Add to the bowl.
  11. Fry 2–3 desalted capers in a little oil until crispy.
  12. Add a drizzle of chili oil to the dressing mixture.
  13. Pour the dressing over the salad and toss gently. Optionally, serve with warm pizza bianca or piadina.
