Niçoise Salad

A classic Niçoise salad revisited by Chef Bruno Barbieri, perfect for a brunch, quick lunch or light dinner. A rich composition of vegetables, eggs, tuna and anchovies, dressed with a delicious homemade sauce.

- 2 pcsPotatoesSliced into rounds
- 2 pcsGreen BeansWhole green beans
- 2 pcsTuna in OilSmall pieces
- 1 pcsHard-Boiled EggWedged
- 2 pcsBell PepperSautéed briefly in oil
- 2 pcsBread (Crostini)Toasted bread croutons
- 2 pcsBlack OlivesBlack olives
- 1 pcsAnchoviesAnchovy fillet
- 2 pcsCucumbersSliced
- CeleryA few pieces
- Red OnionSliced into rings for garnish
- LemonJuice
- Caper PowderCapers ground into powder
- Extra Virgin Olive OilFor the sauce and finishing
- 1 pcsEggEgg yolk for sauce, egg white also used chopped
- White PepperTo taste
- ParsleyChopped, for sauce
- Salt(optional) — To taste (capers and anchovies are already salty)
Method
- Take a large bowl and start composing the salad. Begin with a bed of lettuce.
- Add two slices of potato.
- Add two green beans.
- Add two small pieces of tuna.
- Add one wedge of hard-boiled egg.
- Quickly sauté two pieces of bell pepper in a pan with a little oil, then add them.
- Toast two bread croutons in the pan, then add them to the salad.
- Add two olives and one anchovy fillet.
- Add two slices of cucumber.
- Add another slice of potato to fill the gaps.
- Prepare the sauce: in a bowl, mix an egg yolk, a spoonful of capers powder, a splash of olive oil, some chopped egg white, white pepper, and chopped parsley. Adjust consistency with more oil if needed.
- Add more green beans, bell pepper, a crouton, and more tuna on top.
- Add some celery.
- Add a little more lettuce.
- Squeeze some lemon juice over the salad.
- Add onion rings as garnish.
- Finish with a sprinkle of capers (optional) and a final drizzle of extra virgin olive oil. Serve.
