Today Chef Bruno Barbieri prepares a wonderful summer salad with radicchio, curly endive, Tropea onion, dressed with a coffee-herb flavored oil, anchovies, hard-boiled egg, peas, and fried capers.

- Cetara AnchoviesAnchovy fillets from Cetara, about 2-4 fillets
- 1 pcsEggBoiled for 9 minutes
- PeasFresh peas, blanched
- Desalted CapersDesalted capers, about 2-3
- Olio di PeperoncinoChili oil, to taste
- Extra Virgin Olive OilExtra virgin olive oil, for drizzling
Method
- Prepare the flavored oil: combine Rwandan coffee, basil, sage, thyme, smoked extra virgin olive oil, and Umbrian extra virgin olive oil.
- Wash and cut the radicchio di capo, curly endive, and Tropea onion. Remove the core of the radicchio and cut into pieces. Tear the curly endive into pieces. Slice the onion lengthwise.
- For the dressing: finely chop 2-4 anchovy fillets. Boil an egg for 9 minutes, then chop it. Mix the anchovies with the egg. Add the flavored oil and a drizzle of chili oil. Mix well.
- Blanch the peas in boiling water for 30 seconds, then drain.
- Fry the desalted capers in a small saucepan with a little oil until crispy.
- In a bowl, combine the salad greens, dressing, peas, and fried capers. Add a drizzle of extra virgin olive oil. Toss.
- Serve on a pizza bianca or a warm piadina, if desired.
