Today we make the true Florentine lampredotto sandwich, the one you only find in historic kiosks. I'll show you how to cook it, how to cut it, and how to assemble the perfect sandwich. Soaked bread, green sauce, red sauce, and melting lampredotto. This is not just a sandwich. It's Florentine culture.

Method

  1. Fill a large pot with water and bring to a boil. Add the cleaned vegetables (celery, carrot, onion), cloves, peppercorns, and a dollop of lard for color.
  2. Immerse the abomaso (lampredotto) in the boiling broth. Cover and cook for at least 2 hours, until tender.
  3. Meanwhile, prepare the salsa verde: In a food processor, combine parsley, anchovies, bread crumbs (mollica), olive oil, and lemon zest. Blend until creamy.
  4. Once the lampredotto is cooked, remove from broth and shred into small pieces using a fork. Place in a pan with a little broth to keep it moist.
  5. For the sandwich: Cut the rosetta bread in half. Dip the cut side of the bread in the hot broth to moisten.
  6. Spread a spoonful of salsa verde on the bottom half. Top with a generous amount of shredded lampredotto.
  7. Optionally add spicy salsa (salsa piccante) on top. Add a bit more salsa verde if desired.
  8. Close the sandwich with the top half and press gently. Serve immediately.
