Method
- Blanch the peas and blend them into a puree.
- Add the previously boiled chickpeas and blend again until combined.
- Transfer the mixture to a bowl.
- Add black pepper, toasted pea flour, additional flour, and peanut butter.
- Mix everything thoroughly.
- Wet your hands and form the mixture into a ball, then flatten it into a patty.
- Refrigerate the patty for 1–2 hours to firm up.
- Toast the burger buns with a drizzle of olive oil, a clove of garlic, and rosemary.
- In the same pan, caramelize the sliced onion with a pinch of salt.
- Prepare the sauces: in one bowl mix Greek yogurt with mustard; in another mix Greek yogurt with tomato paste and tomato powder.
- Cook the pea burger in a non-stick pan lined with parchment paper, just until a light crust forms.
- Assemble the burger: spread a base of sauce on the bottom bun, add a lettuce leaf and some pan-fried lettuce, place the burger patty, add tomato slices and caramelized onion, drizzle with chili oil, and top with the remaining sauces (including a parsley sauce if desired).
