Method
- Finely chop the shrimp with a knife.
- Soak bread crumbs in milk, then squeeze out excess milk.
- Mix the chopped shrimp with the soaked bread crumbs, salt, chili pepper, cumin, mustard, and grated lemon zest.
- Knead the mixture well, then shape into a patty on an oiled piece of parchment paper (oil your hands and the work surface).
- Refrigerate the patty to firm it up.
- Prepare the condiments: marinate roasted bell peppers with oregano, a pinch of spices (such as pepper), and salt.
- Prepare a salad with curly lettuce, tomato slices, oil, salt, and Tabasco to taste.
- Prepare a cheese sauce: combine cream cheese with chopped parsley and chives.
- Toast the inside of the bun in a pan with extra virgin olive oil until golden and crunchy.
- Spread mayonnaise and cheese sauce on the toasted bun.
- Cook the shrimp patty in the same pan over medium heat, flipping gently until cooked through.
- Assemble the burger: place the lettuce on the bottom bun, then the tomato slices, then the shrimp patty.
- Top with the marinated bell peppers and the top bun.
- Finish with a sprinkle of spices on top (the 'Barbieri signature').
