- 3 pcsEggs2 for breading, 1 for mayonnaise
- 2 lPeanut OilFor frying
- Seed OilFor mayonnaise, amount as needed
- SageFresh, chopped, for mayonnaise
Method
- Finely slice the red cabbage and season with oil, salt, and apple cider vinegar. Mix well with your hands, squeezing, and let it marinate.
- Prepare the sage mayonnaise: in a blender, combine vegetable oil and egg. Blend. Add a pinch of salt, vinegar, and chopped sage. Blend again.
- Prepare the pumpkin: cut butternut squash into slices about 1.5 cm thick and peel. Bread them in flour, beaten egg, and breadcrumbs.
- Fry the pumpkin cutlets in peanut oil at 160°C. Do not increase the temperature so they cook through inside.
- Slice the burger buns. Assemble: spread sage mayonnaise on the bottom bun, add a pumpkin cutlet, squeeze some marinated cabbage (drained), and close with the top bun spread with more mayonnaise.
- Serve and enjoy.
