Gnocchi with Drunken Vegetable Ragù

Soft potato gnocchi tossed in a rich, wine-infused vegetable ragù with eggplant, bell peppers, and portobello mushrooms. A hearty and flavorful Italian comfort dish.

- Eggplant1 medium eggplant
- Garlic1 clove
- Shallot1 shallot
- Celery1 stalk celery
- Carrot1 carrot
- Red WineAs needed for deglazing (about 1/2 cup)
- TomatoesCanned peeled tomatoes or fresh, about 200 g
- Portobello Mushrooms1 large portobello mushroom
- Olive OilExtra virgin olive oil, as needed
- SaltTo taste
- Pepper(optional) — Black pepper, to taste
- Fresh OreganoA few sprigs, for garnish
- PecorinoGrated or shaved, to taste
- Chives(optional) — Chopped, for garnish
- Potato GnocchiFresh potato gnocchi, about 400 g
Method
- Cut the bell pepper in half, remove seeds and white membranes, then dice into 0.5 cm cubes.
- Peel the eggplant and dice into 0.5 cm cubes.
- Heat olive oil in a pan over low heat. Add a garlic clove and chopped shallot; sauté until golden.
- Add diced celery and carrot, then increase heat to medium and cook briefly.
- Add the eggplant cubes and cook for 5 minutes, stirring occasionally.
- Add the bell pepper cubes. Remove the garlic clove.
- Deglaze with red wine, letting the alcohol evaporate completely.
- Add tomatoes (canned or fresh), salt, and optional pepper. Lower the heat and simmer for about 10 minutes.
- Meanwhile, slice the portobello mushroom into strips, then dice into 0.5 cm cubes.
- In a separate pan, heat olive oil over high heat. Add the mushrooms and a pinch of salt so they release water. Cook until tender.
- Deglaze the mushrooms with red wine and cook for about 10 minutes until the wine has reduced.
- Add the cooked mushrooms to the vegetable ragù and stir well. Simmer for another 10 minutes.
- Cook fresh potato gnocchi in boiling salted water for 2 minutes (or according to package directions).
- Drain the gnocchi and add them to the ragù along with a little pasta cooking water to help bind the sauce.
- Serve garnished with fresh oregano, grated pecorino cheese, and chopped chives.
