Green Gazpacho with Marinated Cheese

Today I take you to Spain with my green gazpacho with marinated cheese, a fresh and light dish perfect for a summer dinner. This variation of the classic recipe will surprise you.

Ingredients
20 items- BreadCut into croutons and pan-fried with oil, oregano, spices, garlic.
- Cucumber
- Bell Peppers
- Chili Pepper
- Pomodori Cannoncino Verde
- Aceto di Sidro
- Water
- HazelnutsToasted.
- Noci MacadamiaToasted.
- Parsley
- Sugar
- Extra Virgin Olive Oil
- Greek Yogurt
- CheeseSoft cheese slices.
- Chili OilUsed for marinating and finishing.
- Chives
- Black Pepper
- GarlicUsed raw for the marinade.
- BasilFresh leaves.
- Parsley OilUsed for finishing.
Method
- Cut bread into cubes and toast in a pan with oil, oregano, spices, and garlic.
- In a bowl, combine cucumber, bell peppers, chili pepper, and green tomatoes.
- Add cider vinegar and water.
- Add toasted hazelnuts and macadamia nuts.
- Add parsley and sugar.
- Add extra virgin olive oil.
- Add Greek yogurt.
- Blend everything until smooth to obtain the gazpacho.
- Marinate the cheese: in a bowl, mix chili oil, chives, black pepper, and raw garlic; add cheese slices and coat.
- To plate, place two slices of marinated cheese on the bottom of a plate.
- Cover with the gazpacho.
- Add another slice of cheese on top.
- Add some crostini and a basil leaf.
- Drizzle with chili oil and parsley oil.
