Potato Gateau

A versatile potato gateau that can be served as an appetizer, main course, or side dish. Layered with Fontina and Parmesan, infused with aromatic herbs.

- Sage
- Rosemary
- Thyme
- Pink Peppercorns
- Black Peppercorns
- Nutmeg
- Salt
- Potatoes
- Butter
- Fontina Valdostana
- Parmigiano Reggiano
- Fonduta(optional) — For garnish
- Sun-Dried Tomato Sauce(optional) — For garnish
- Parsley Oil(optional) — For garnish
Method
- Prepare an aromatic cream base: put cream in a saucepan with bay leaf, sage, rosemary, pink and black peppercorns, and nutmeg. Let it reduce slightly and season with salt.
- Meanwhile, peel the potatoes and slice them thickly by hand.
- Butter a baking dish.
- Arrange a layer of potato slices on the bottom, slightly overlapping.
- Add pieces of Fontina, Parmesan, and a little thyme.
- Continue layering potatoes and cheeses, pressing down.
- Pour the reduced cream over the layers, covering completely.
- Grate nutmeg on top.
- Bake at 180°C until the potatoes have absorbed all the cream.
- Let the gateau cool to set, then reheat before serving if desired.
- Serve in slices, garnishing as desired with cheese fondue, sun-dried tomato sauce, parsley oil, and more nutmeg.
