Shrimp in puff pastry crust are a quick and easy appetizer, tasty and fun to enjoy: a light marinade will keep the shrimp soft and juicy, and the puff pastry crust, enriched with sesame seeds, will give a crunchy and original touch. The final touch? A fresh yogurt and mint sauce to dip these delicious little treats!

Ingredients
12 items- Shrimpraw, shell-on, heads removed
- Olive Oilextra virgin, for marinating and finishing
- Eggbeaten, for brushing
- Black Pepperground, to taste
- Lemon Juicefor the sauce
- Greek Yogurtplain, for the sauce
- Sunflower Seedsfor topping
- Semi di Sesamo Nerofor topping
- White Sesame Seedsfor topping
- Saltto taste
- Fresh Mintleaves, for the sauce
- Puff Pastryready-rolled sheet
Method
- Clean the prawns: remove the heads (save for fish stock), peel off the shell, leaving the tail attached, and devein using a toothpick.
- Season the prawns with a drizzle of olive oil, salt, and pepper; mix gently.
- Roll out the puff pastry and cut it into strips about 1 cm wide.
- Wrap each prawn with a strip of puff pastry, starting from the head end and rolling towards the tail.
- Place the wrapped prawns on a baking tray lined with parchment paper.
- Beat the egg and brush it over the puff pastry.
- Sprinkle with a mix of white sesame seeds, black sesame seeds, and sunflower seeds.
- Bake in a preheated static oven at 200°C (400°F) for 15 minutes, or until golden brown.
- Meanwhile, prepare the sauce: in a bowl, combine Greek yogurt, salt, pepper, lemon juice, and chopped fresh mint leaves.
- Add a drizzle of olive oil, mix well, and set aside.
- Serve the prawns hot, with the yogurt-mint sauce on the side.
