  1. Clean the prawns: remove the heads (save for fish stock), peel off the shell, leaving the tail attached, and devein using a toothpick.
  2. Season the prawns with a drizzle of olive oil, salt, and pepper; mix gently.
  3. Roll out the puff pastry and cut it into strips about 1 cm wide.
  4. Wrap each prawn with a strip of puff pastry, starting from the head end and rolling towards the tail.
  5. Place the wrapped prawns on a baking tray lined with parchment paper.
  6. Beat the egg and brush it over the puff pastry.
  7. Sprinkle with a mix of white sesame seeds, black sesame seeds, and sunflower seeds.
  8. Bake in a preheated static oven at 200°C (400°F) for 15 minutes, or until golden brown.
  9. Meanwhile, prepare the sauce: in a bowl, combine Greek yogurt, salt, pepper, lemon juice, and chopped fresh mint leaves.
  10. Add a drizzle of olive oil, mix well, and set aside.
  11. Serve the prawns hot, with the yogurt-mint sauce on the side.
