Crispy and light fried squid rings in a special batter made with sparkling water and beaten egg whites, resulting in an airy and delicate coating. A classic Italian seafood appetizer.

- 150 gFlour
- SaltTo taste
- 140 gSparkling Water
- 1 pcsEgg Yolk
- 500 gSquidOr calamari
- Seed OilFor frying
- Salt FlakesTo taste
Method
- Squeeze the lemon and set the juice aside.
- In a bowl, beat the egg white until frothy.
- In another bowl, combine the flour, a pinch of salt, and the lemon juice.
- Add the sparkling water and the egg yolk, mixing until smooth.
- Gently fold in the beaten egg white using a spatula with a bottom-up motion.
- Cover the bowl with plastic wrap and refrigerate for 20 minutes.
- Meanwhile, cut the squid into rings.
- Dip the squid pieces into the batter.
- Fry the battered squid in hot seed oil for 2–3 minutes until golden.
- Drain on paper towels.
- Sprinkle with salt flakes and serve immediately.
