Method

  1. Take stale bread (2-3 days old) and grate it into fine breadcrumbs.
  2. In a bowl, mix the breadcrumbs with grated Parmesan cheese (or Pecorino if desired).
  3. Add minced garlic, chopped fresh mint, and chopped fresh parsley.
  4. Season with salt and freshly ground black pepper to taste.
  5. Pour in a splash of sparkling wine and some milk; mix until the breadcrumbs are moistened.
  6. Crack eggs into the mixture and stir well to combine.
  7. Heat a generous amount of oil in a non-stick frying pan over medium heat.
  8. Pour the batter into the hot pan and spread evenly.
  9. Cook for about 15 minutes, flipping halfway through, until golden brown and cooked through.
  10. Serve hot or at room temperature.
