A delicious Italian onion frittata recipe by Chef Bruno Barbieri. Simple ingredients: onions, eggs, Parmesan, and provolone. Sautéed onions are mixed with beaten eggs and cooked to perfection. Serve with a fresh herb salad for a complete meal.

- Chili PepperRed chili, fresh or dried, to taste
- 1 pcsBay LeavesBay leaf
- WaterSplash for sautéing and beating eggs
- Cream or Milk(optional) — Optional, to beat with eggs for creaminess
- Parmigiano ReggianoGrated, about a handful
- Provolone(optional) — Slice to top the frittata after flipping; optional but recommended
- 2 pcsLardo(optional) — Optional; chef uses it to flavor the oil then removes
- Basil(optional) — Fresh basil leaves for garnish salad
- Mint(optional) — Fresh mint leaves
- Thyme(optional) — Fresh thyme sprigs
- Rosemary(optional) — Fresh rosemary needle
- Parsley(optional) — Fresh parsley leaves
- Marjoram(optional) — Fresh or dried marjoram
- Caper Powder(optional) — Optional, dried caper powder for dusting
Method
- Slice the onions into strips or small pieces (julienne).
- In a pan, add a drizzle of oil and sauté the onions with salt, pepper, dried oregano, chili, and a bay leaf. Cook until soft and lightly golden. Add a splash of water or white wine if needed.
- In a bowl, beat 4 eggs with a splash of water or cream to break the whites. Add grated Parmesan cheese and mix.
- Let the cooked onions cool completely (do not add hot onions to the eggs).
- Once the onions are cold, add them to the beaten eggs and mix well until evenly combined.
- Heat the same pan with a little oil. Pour in the egg-onion mixture and spread evenly.
- Cook over medium heat, gently stirring at the beginning (like scrambling) until the bottom sets. Let the frittata cook until it moves freely in the pan.
- Flip the frittata using a lid or by turning it over. If needed, finish cooking in a preheated oven (optional).
- Once flipped, place slices of provolone on top and let melt.
- Slide the frittata onto a plate. Garnish with a fresh herb salad (mix of basil, mint, thyme, rosemary, parsley, dried oregano, marjoram, dressed with olive oil and salt) and dust with caper powder and chili (optional). Serve at room temperature.
