A creative frisella topped with a creamy chickpea purée, roast beef brushed with mustard, braised mortadella, and a final touch of rosemary oil and dried tomato.

- Extra Virgin Olive OilFor drizzling on the cream and for rosemary-infused oil
- Pomodoro EssiccatoDried tomato, ground into powder for sprinkling
Method
- Boil chickpeas in their own water with rosemary, thyme, salt, and pepper until tender.
- Take a piece of pre-cooked roast beef and sear it in a pan with rosemary needles.
- Brush the seared roast beef with mustard and continue cooking, turning it so it is well coated.
- In the same pan, add a slice of mortadella and let it braise gently.
- Prepare the frisella: In a separate pan, aromatize water with a clove of garlic, marjoram, and mint if desired. Briefly immerse the frisella in the water, then toast it in the pan until crispy.
- Season the toasted frisella with a pinch of salt and pepper.
- Blend the cooked chickpeas into a smooth purée (chickpea cream).
- On a plate, spread a generous base of chickpea cream.
- Drizzle extra virgin olive oil over the cream.
- Place slices of the roast beef on top of the cream.
- Place the braised mortadella on top of the roast beef.
- Add a sprig of rosemary and drizzle with hot rosemary-infused oil.
- Sprinkle with dried tomato powder.
- Serve immediately with the toasted frisella.
