Method
- Take two slices of sandwich bread. Spread red fruit jam on one slice, add a little cinnamon powder and some mint leaves. Cover with the other slice and press lightly.
- Cut the toast into four pieces (two diagonal cuts).
- In a bowl, crack an egg and add a splash of milk and a splash of water. Whisk well.
- Prepare a plate with flour.
- Quickly dip each piece of toast first in milk, then in egg, then in flour. Do not soak too long: each step lasts a couple of seconds.
- In a pan, melt butter until it becomes noisette (slightly browned).
- Fry the toasts in the hot butter, turning halfway, until evenly golden. During cooking, collect the melted butter and baste the toasts to make them crispy.
- Meanwhile, prepare the sauce: in a small saucepan, put maple syrup (or honey), small strawberries, raspberries, one grated tonka bean, a pinch of cardamom, two cloves, some cinnamon, a splash of balsamic vinegar, and a few mint leaves. Heat briefly without boiling too much.
- Plate: pour some warm sauce on the plate, arrange the toasts, add some fresh red fruits, mint leaves, and dust with powdered sugar.
