The francesina is a traditional Roman braised beef dish. The meat is first cooked in vegetable broth for 3 hours, then braised with onions and peeled tomatoes. It is served on a bread roll dipped in the sauce and topped with a homemade salsa verde made with pecorino, fennel, and parsley.

Method
- Take a good piece of beef muscle.
- Prepare a vegetable broth and put the meat in it. Cook for 3 hours.
- Take the yellow onions and slice them very finely.
- Pour them into a pan with olive oil and let them braise.
- Take the peeled tomatoes and crush them by hand.
- After 3 hours of cooking, the meat is ready. Remove it from the broth and place on a cutting board.
- Slice it carefully because it will fall apart.
- Place the meat on the bed of yellow onions and let it braise.
- Add a pinch of salt and the crushed tomatoes.
- Cook for 40 minutes.
- Take a bread roll and dip it into the sauce.
- Place the meat on the roll.
- Prepare the green sauce: mix pecorino, fennel, and parsley.
- Add the green sauce on the roll.
