Fake Lasagna with Crackers

An easy and ingenious fake lasagna made with crackers instead of pasta, filled with potatoes, giardiniera, tuna, and anchovies. Perfect for a quick and tasty meal.

- Cetara Anchovies
- Extra Virgin Olive Oil
- Garlic
- Parsley
- Vegetable Broth(optional)
- Salt
- Dried Oregano(optional)
- Tropea Red Onion(optional) — for garnish
- Crackersuse as lasagna sheets
Method
- Boil the potatoes until tender.
- In a pan, sauté a clove of garlic in extra virgin olive oil. Add parsley, a pinch of salt, and a splash of vegetable broth. Cook for 4-5 minutes, then remove the garlic.
- Meanwhile, cut the Tropea onion into strips (if using). Cut the anchovies into squares and the tuna into small pieces.
- When the potatoes are ready, drain and mash them with a fork while hot. Add dried oregano and some of the giardiniera. Mix well.
- On a plate, spread a thin layer of the potato mixture as a base. Add the tuna, anchovies, and a drizzle of extra virgin olive oil.
- Place crackers on top to form a 'lasagna' layer. Spoon some of the prepared sauce over the crackers.
- If desired, warm in a hot oven for 30 seconds. Garnish with a drizzle of oil and some of the chopped onion. Serve.
