Beans with Pork Rind

A traditional poor farmer's dish of beans cooked with pork rind in a rich tomato sauce, served with crusty ciabatta bread.

- Soak the cannellini beans overnight. Drain and boil in fresh water for one hour.
- Get pork rind from the butcher, remove excess fat, and boil for one hour.
- Prepare a coarse soffritto: finely chop celery, carrot, and onion. Do not chop too finely; it should be rustic.
- Heat extra virgin olive oil in a pot.
- Add the chopped vegetables and sauté until golden. Crush the tomatoes with your hands and add them to the pot.
- Add basil leaves, salt, pepper, and any other seasonings you like.
- When the pork rind is tender, place it on a cutting board and cut into small pieces.
- Add the pork rind pieces to the tomato sauce, along with a little bean cooking water. Cook for 30 minutes.
- Add the cooked cannellini beans and stir to combine.
- Serve with a crusty ciabatta bread cut in half. Enjoy.
