Fagioli all'Uccelletto and Pappa al Pomodoro Soup

A hearty Tuscan soup combining two classics: fagioli all'uccelletto and pappa al pomodoro, with beans, bread, and kale.
Ingredients
15 items- Black-Eyed Peasdried, soaked 15-20 minutes
- Cooked Cannellini Beanscooked
- Celeryfor soffritto
- Carrotfor soffritto
- Onionfor soffritto
- Lardoa piece
- Sagea few leaves
- Chili Pepperto taste
- Garlicgrated, for soffritto and bread
- 1 tbspTomato Pasteheaped
- Tomato Passatahomemade
- Stale Homemade Breadstale, thick slices
- Extra Virgin Olive Oilfor bread and drizzling
- Saltto taste
- Cavolo Nero(optional) — Tuscan kale, a handful
Method
- Soak the dried borlotti beans in water for 15-20 minutes.
- Finely chop celery, carrot, and onion for the soffritto.
- In a pot, slowly cook the soffritto with a piece of lardo, sage, chili pepper, and grated garlic.
- Add a heaped tablespoon of triple-concentrated tomato paste and stir.
- Add the soaked borlotti beans and the cooked cannellini beans to the pot.
- Add homemade tomato passata (strained tomatoes) and enough water to make it brothy. Simmer.
- Meanwhile, slice stale rustic bread, season with olive oil and salt, and toast in the oven until golden.
- Grate half a clove of garlic over the toasted bread slices.
- Add the toasted bread to the soup, season with salt, and cook for another 15 minutes.
- At the end of cooking, stir in a handful of cavolo nero (Tuscan kale) and let it wilt. Serve with a drizzle of extra virgin olive oil.
