Ingredients
22 items- 3 pcsGolden Onionsgolden onions from Medicina, hollowed out
- Vegetable Brothfor boiling the onion shells, mixed with white wine
- White Winewhite wine to add to the broth
- Breadbread with crust, cut into croutons
- Garlicused in the filling and in the raw sauce
- Rosemaryfor sautéing the bread croutons
- Fetamarinated and used as stuffing
- Tomatoescut into small cubes, with seeds and juice
- Basilfresh basil leaves
- Dried Oregano(optional) — a pinch
- Fresh Oreganofresh oregano for marinating feta
- Extra Virgin Olive Oilextra virgin olive oil, used throughout
- Salt(optional) — to taste
- Pepper(optional) — freshly ground black pepper
- Pecorinograted on top of the stuffed onions
- Capersfor the sauce, slightly crushed
- 2 pcsHard-Boiled Eggshard-boiled eggs, used for the sauce (yolks and whites separated)
- Anchoviesanchovies, chopped for the sauce
- Parsleyfresh parsley, chopped
- Dried Chili Pepperdried chili flakes for the feta marinade
- Fresh Chili Pepper(optional) — a little fresh chili for extra heat
- Cumindried cumin for the feta marinade
Method
- Hollow out the onions to create shells.
- Briefly boil the onion shells in broth with white wine for 2-3 minutes. Then remove and let them cool and dry.
- Cut bread with crust into croutons.
- In a pan, sauté a little garlic and rosemary in oil, then add the bread croutons and toast.
- Chop the reserved onion interiors and sauté them separately in oil with a pinch of salt.
- Cut tomatoes into small cubes, keeping the seeds and juice. Add basil, a hint of dried oregano, and a micro amount of raw garlic. Mix.
- Marinate feta cheese with extra virgin olive oil, salt, dried chili flakes, cumin, and fresh oregano.
- Stuff the onion shells: start with a layer of bread croutons, then sautéed onion, then tomato mixture, then feta. Repeat, pressing down firmly. Top with grated pecorino cheese.
- Drizzle with oil and pepper, then bake in the oven for about 7-8 minutes until the onion is tender.
- Meanwhile, prepare the sauce: crush capers, chop anchovies, and hard-boiled egg yolks. Mix together, then add chopped egg whites, parsley, salt, pepper, and raw garlic. Emulsify with plenty of extra virgin olive oil to create a coarse sauce.
- Serve the stuffed onions on a plate with the sauce underneath and on top.
