Light and vegan version of the classic Italian carnival fritters, baked instead of fried, and served with a creamy vegan custard. No milk, butter, or eggs.

Ingredients
9 items- 250 gFlour
- 250 gLatte di Avena
- 100 gRaisins(optional) — Optional; add if desired
- 50 gSunflower Oil
- 40 gSugar
- 8 gBaking PowderBaking powder
- Powdered Sugar(optional) — For dusting; to taste
- 40 gCorn Starch (Maizena)Cornstarch
- Turmeric Powder(optional) — Optional; for yellow color
Method
- In a bowl, mix together flour, sugar, and baking powder.
- Add the plant-based drink and sunflower oil; stir until combined.
- Add the raisins (optional) and mix in.
- Pour the batter into silicone molds or paper cups.
- Bake in a preheated oven until golden (no time given; check for doneness).
- Meanwhile, prepare the vegan cream: in a saucepan, whisk together cornstarch, powdered sugar, and hot plant-based drink. Add a pinch of turmeric if you want a yellow color.
- Remove the castagnole from the oven and let them cool completely on a wire rack.
- Dust with powdered sugar and, if desired, dip them in the vegan cream before serving.
