A traditional Italian autumn cake made with chestnut flour, studded with raisins, pine nuts, and walnuts, and flavored with rosemary.

8 items- 400 gChestnut Flour
- 550 gWaterAbout 530–550 g, added gradually
- SaltA pinch
- 80 gRaisins
- 80 gWalnutsCoarsely chopped
- 80 gPine Nuts
- 2 pcsRosemarySprigs; use needles only
- 1 tbspExtra Virgin Olive OilFor greasing the pan
Method
- Soak the raisins in water and coarsely chop the walnuts.
- Sift the chestnut flour into a bowl, add a pinch of salt, and gradually pour in the water while mixing until smooth.
- Add a portion of the raisins, pine nuts, and walnuts to the batter and stir to combine.
- Grease a cake pan with 1 tablespoon of olive oil and pour the batter in.
- Drizzle the remaining 1 tablespoon of olive oil over the surface, top with the remaining raisins, pine nuts, and a few rosemary needles.
- Bake in a preheated oven until set and golden. Let cool completely before serving.
