Learn how to prepare authentic Sicilian cannoli from scratch. This recipe focuses on the traditional filling made with sheep's milk ricotta, powdered sugar, candied fruit, and chocolate chips. The filling is mixed until smooth and creamy, then used to fill crispy pre-made cannoli shells just before serving. Ingredients
6 items- 800 gSheep's RicottaSheep's milk ricotta; do not use cow's or goat's milk ricotta.
- Powdered SugarUse powdered sugar or very fine sugar so it dissolves completely.
- Candied FruitsPreferably candied orange peel; can also use other candied fruit.
- Chocolate ChipsAdd to taste.
- Cannoli ShellsPre-made crispy cannoli shells; buy good quality ones.
- Icing Sugar for DecorationFor dusting the finished cannoli.
Method
- Ensure the ricotta is sheep's milk ricotta. Place it in a bowl.
- Add powdered sugar (or very fine sugar) and mix vigorously by hand until smooth and creamy, with no lumps. This takes about 20 minutes. Alternatively, use a blender.
- Fold in candied fruit (preferably orange peel) and chocolate chips to taste.
- Just before serving, fill the cannoli shells generously. Use a piping bag if available.
- Garnish with additional candied fruit and/or chocolate, and dust with powdered sugar.
