Neapolitan Calamarata

A classic Neapolitan first course: calamarata pasta tossed with tender squid in a rich tomato sauce, finished with parsley and a drizzle of olive oil. Learn how to clean squid at home and how to get the perfect creamy sugo.

Ingredients
11 items- Calamarifresh; clean them as shown in the video
- Calamarata Pastathe pasta shape that gives the dish its name
- Oilplenty, for cooking and finishing
- Garlic1 clove, in camicia (skin on), crushed
- Chili Peppera little, to taste
- White Winea splash, for deglazing
- Cherry Tomatoescherry tomatoes; add more concentrate if they are not in season
- Tomato Pastea few tablespoons, to give body to the sauce
- Waterhot water for the sauce and pasta cooking water for mantecatura
- Saltfor the pasta water
- Parsleychopped, to finish
Method
- Clean the squid: separate the head from the body, remove the innards, eyes and beak, peel off the skin and pull out the pen (cartilage). Rinse the inside of the squid very well.
- Remove the fins and cut them together with the tentacles; cut the squid body into rings.
- In an aluminium pan, heat plenty of oil with a crushed garlic clove left in its skin (in camicia) and a little chilli.
- When the oil is hot, add the squid and deglaze with a splash of white wine.
- Remove the garlic, then add the cherry tomatoes and a few tablespoons of tomato concentrate, keeping the heat high.
- Add a ladle or two of hot water and cook the squid for about 5 minutes.
- Meanwhile, cook the calamarata pasta in plenty of salted boiling water.
- Drain the pasta 3 minutes before the end of cooking and tip it directly into the pan with the sauce.
- Toss the pasta, gradually adding pasta cooking water and moving it around so it releases starch, until the sauce becomes creamy.
- Off the heat, add parsley, a drizzle of olive oil and toss once more. Serve immediately.
