A classic Roman pasta dish made with only pasta, pecorino romano, and black pepper. The creaminess comes from emulsifying the cheese with pasta cooking water, without any added fat. The traditional version uses neither parmesan nor oil.

Ingredients
4 items- Spaghettoni Or Tonnarelli
- Pecorino RomanoAged 6-9 months
- Black Peppercorns
- SaltTo taste, for the pasta water
Method
- Put water on the fire and lightly salt it.
- When it boils, add the pasta (spaghettoni or tonnarelli).
- Meanwhile, toast the black peppercorns in a pan over medium heat until fragrant.
- Pound the toasted pepper in a mortar until coarsely ground.
- Grate plenty of pecorino romano (aged 6-9 months) using a fine grater.
- Drain the pasta al dente, reserving some pasta water.
- In the same pan used for the pepper, add a ladle of pasta water and the pounded pepper.
- Transfer the pasta to the pan and toss over medium heat for a couple of minutes, adding more water if needed.
- Turn off the heat and let the pasta rest for about 40 seconds.
- Add a generous amount of grated pecorino over the pasta.
- Using two forks, mix the pasta with the cheese until a creamy emulsion forms.
- Plate and serve immediately.
