Method
- Combine 220g all-purpose flour and 90g powdered sugar.
- Add the zest of 1 lemon and 3g baking powder.
- Add 90g butter and mix until crumbly.
- Add 1 egg and knead until a smooth dough forms.
- Wrap the dough in plastic wrap and refrigerate for 15 minutes.
- Lightly flour the work surface and roll out the dough.
- Sprinkle 50g pine nuts over the dough and press them in with the bottom of a glass.
- Cut out cookies.
- Place the cookies on a baking sheet lined with parchment paper and bake in a preheated static oven at 180°C (350°F) for 15 minutes.
- Heat 300ml milk.
- In a saucepan, combine 3 egg yolks, 65g sugar, and 30g cornstarch.
- Add 1 teaspoon vanilla extract and whisk.
- Add the milk while stirring.
- Continue stirring and cook until the pastry cream thickens.
- Cool the pastry cream by placing the saucepan in a bowl of cold water.
- Fill the cookies with the cream.
- Dust with powdered sugar and serve.
