- Mandorle a Lamelletoasted

Method
- Make the herb crumble: combine grated cheese, flour, rosemary, a pinch of salt, and cold butter in a food processor. Pulse until crumbly.
- Transfer the crumble to a baking sheet lined with parchment paper, spread it out, and bake at 180°C (static mode) for 15 minutes.
- Crumble the baked crumble directly on the tray and place a layer at the bottom of each glass.
- Add a layer of Philadelphia cream cheese and spread evenly.
- Chop the salmon finely like a tartare and gently place it over the cream cheese.
- Add toasted sliced almonds, lime zest, another layer of crumble, and finally fresh dill.
- Serve and enjoy.
