A creative twist on the classic Roman amatriciana, using salted cod (baccalà) together with crispy guanciale, tomato passata, and pecorino romano, served over rigatoni.

Method

  1. Cut the guanciale into strips and render it slowly in a pan until crispy.
  2. Take a piece of rehydrated baccalà, fillet it, and cut into cubes.
  3. Fry the baccalà cubes in the rendered guanciale fat.
  4. Add black pepper and tomato passata to the pan.
  5. Cook the sauce for 10 minutes, then turn off the heat.
  6. Add the crispy guanciale on top of the sauce.
  7. Cook half a kilogram of rigatoni until al dente.
  8. In the last two minutes, transfer the pasta to the sauce pan and risottare (finish cooking together) with a splash of pasta water.
  9. Add pecorino romano to taste and mantecare (emulsify) vigorously.
  10. Serve with an extra sprinkle of black pepper and more pecorino.
