Amatriciana Di Baccalà

A delicious twist on the classic Amatriciana, using salted cod (baccalà) instead of guanciale. The cod is toasted in rendered guanciale fat, then simmered with crushed tomatoes and spices. Served over spaghetti with crispy guanciale and pecorino cheese.

Method

  1. Cut the baccalà into pieces.
  2. Cut the guanciale into small cubes.
  3. Sauté the guanciale in a pan until crispy and rendered.
  4. Toast the baccalà in the rendered guanciale fat.
  5. Crush the peeled tomatoes with your hands and season with salt, oil, and pepper.
  6. Add the tomatoes to the baccalà and cook to make a sauce.
  7. Add the spaghetti directly to the sauce and cook like a risotto, adding cooking water and pepper.
  8. Toss everything together until creamy.
  9. Add crispy guanciale and pecorino cheese.
  10. Plate and serve.
