A simple method to create aromatic red wine vinegar with herbs and spices. Let it macerate for 8 days before using.

- Bay LeavesOne leaf

- Sultanina Grapes(optional) — Optional, a few raisins
- Skin-On Garlic CloveOne whole clove with skin, slightly crushed
- CuminSeeds, to taste
- Semi di Finocchietto SelvaticoSeeds, to taste
- Maggiorana EssiccataDried, to taste
- Pink PepperA few grains
- Black PepperA few grains
- CilantroSeeds, a few
- Red Wine VinegarRed wine vinegar, enough to fill the bottle
Method
- Prepare a clean, large bottle or jar.
- Place a sprig of rosemary, a bay leaf, and a sage leaf into the bottle.
- Add a few sultana raisins (optional, but recommended).
- Add a whole garlic clove with skin on, gently crushed or incised.
- Prepare a small cheesecloth sachet with cumin seeds, wild fennel seeds, and dried marjoram; tie it closed and lower it into the bottle, or simply drop the mixture in if preferred.
- Add a few pink peppercorns, black peppercorns, and coriander seeds.
- Pour red wine vinegar into the bottle to fill it completely.
- Seal the bottle with a stopper and let it macerate for 8 days in a cool, dark place.
- After 8 days, the vinegar is ready. Use as is or strain before using.
