La storia
Spaghettone con Caciocavallo, Zucchine Fritte e Camboni is a pasta dish originating from Castelbuono, Italy, a town in the Madonie mountains of Sicily. The dish is a specialty of the venue Il Palazzaccio, as highlighted by the food guide *Where The Foodies Go*. It features spaghettone, a thicker, more robust version of spaghetti, which provides a hearty base for the rich, savory components.
Key ingredients include caciocavallo, a semi-hard, stretched-curd cheese from Southern Italy that melts into a creamy, slightly tangy sauce; fried zucchini (zucchine fritte), which add a tender texture and subtle sweetness; and Camboni, a local cured pork product similar to pancetta or guanciale, contributing a salty, umami depth. A great version of this dish is distinguished by the perfect al dente texture of the spaghettone, the crispness of the fried zucchini that contrasts with the creamy cheese, and the balanced saltiness of the Camboni, which should not overpower the other flavors. The cheese should be melted just enough to coat the pasta without becoming stringy or greasy.
Regional variations in Sicily might substitute other local cheeses like ricotta salata or use different pasta shapes, but the combination of caciocavallo, fried zucchini, and cured pork is a hallmark of Madonie cuisine. Il Palazzaccio’s rendition is considered a definitive expression of this rustic, mountain-inspired dish.

Un ristorante fantastico a Castelbuono dove abbiamo mangiato un pranzo incredibile con ingredienti freschissimi e locali e piatti eccellenti come il tortino di tenerumi, il manzo gravlax e il raviolo al tartufo.
