Pane Nero di Castelvetrano is a traditional dark bread from the town of Castelvetrano, in Sicily’s Trapani province. Its distinctive black color comes from the inclusion of *semi integrale* (whole wheat) flour and, historically, from the addition of cooked grape must or, in some versions, a small amount of black olive paste or toasted barley. The bread’s deep, earthy flavor and dense, chewy crumb are a result of a long, slow fermentation using a natural sourdough starter, or *lievito madre*.
A great Pane Nero is distinguished by its dark, almost charcoal-hued crust, a moist but firm interior, and a complex, slightly tangy aroma with notes of toasted grain and a subtle sweetness.
