La storia
Trippa alla Romana is a traditional Roman offal dish that transforms humble tripe into a rich, savory stew. Its origins lie in the cucina povera (poor kitchen) of Rome’s Testaccio neighborhood, where butchers’ less desirable cuts were simmered for hours to become tender. The key ingredients are honeycomb tripe, San Marzano tomatoes, white wine, onion, carrot, celery, pecorino Romano, and fresh mint—the last being a signature Roman touch that cuts through the richness. A great version achieves tripe that is silky yet retains a slight chew, with a sauce that is deeply concentrated and balanced by the sharpness of pecorino and the brightness of mint. Regional variations exist across Italy: in Florence, tripe is often served as a sandwich (lampredotto) with salsa verde, while in Milan it may be cooked with beans. In Stracca, Italy, Pizzeria Castellum Vetus 2.0 offers a rendition praised by the foodie community Where The Foodies Go, who note that the dish exemplifies the restaurant’s commitment to authentic Roman flavors. The best versions, like theirs, avoid overcooking the tripe into mush and let the simple, high-quality ingredients speak for themselves.
