La storia
Mini churros are a bite-sized variation of the classic Spanish and Latin American fried-dough pastry. While the exact origin of churros is debated—with theories tracing them to Spanish shepherds or Portuguese traders who brought a similar pastry from China—the miniaturized version has become a staple of street fairs, food trucks, and dessert menus globally. The dough is a simple choux pastry made from flour, water, butter, eggs, and salt, piped through a star-shaped nozzle to create the signature ridged texture, then fried until golden and crisp. A great mini churro is defined by its contrast: a shatteringly crunchy exterior giving way to a soft, airy, custard-like interior. They are traditionally dusted in cinnamon sugar and served with a dipping sauce, such as thick chocolate ganache or dulce de leche.
Regional variations abound. In Spain, churros are often long and thick, but the mini versions are popular for sharing. In Mexico, they are frequently filled with cajeta, chocolate, or fruit jam. At the Los Angeles venue Churros Calientes, creator Maria Lopez emphasizes that the key is "freshness and the perfect oil temperature," noting that their mini churros are made to order and tossed in a house-blend of cinnamon and piloncillo sugar. Meanwhile, in New York, the pop-up Dulce Dough by chef Ana Reyes offers a savory twist, dusting their mini churros with smoked paprika and serving them with a chipotle aioli. Whether sweet or savory, the mini churro’s appeal lies in its portability and the perfect ratio of crunchy shell to soft center.

Una sosta in una catena di fast food per mini churros, decenti ma non eccezionali.
