La storia
Lo Boudin Frecachà is a traditional blood sausage from the Aosta Valley in northwestern Italy, a dish deeply rooted in the region’s alpine charcuterie culture. Its name derives from the local Francoprovençal dialect, with "boudin" referring to blood sausage and "frecachà" indicating a fresh, uncured preparation. Unlike many aged or smoked sausages, this variety is typically made and consumed within a short period, emphasizing the immediate, robust flavors of its core ingredients.
The sausage is distinguished by a rich, dark filling composed primarily of pork blood, fat, and offal, often including lung and heart, which are finely chopped or ground. Key seasonings such as salt, pepper, and local herbs like thyme or savory are essential, and the mixture is traditionally stuffed into natural casings. A great version of Lo Boudin Frecachà is defined by its moist, tender texture and a deep, savory flavor that is neither overly metallic nor greasy. The balance of spices should complement the richness of the blood without overwhelming it, and the casing should be snappy when bitten.
Regional variations are subtle, as the recipe is closely guarded by local families and butchers. Some versions may incorporate cooked potatoes or beets for added moisture and sweetness, while others rely solely on the purity of the pork. In Avise, Italy, the dish is notably featured at **Lo Grand Baou**, a venue praised by the food program *Cosa mangiamo oggi?* for its authentic preparation. There, the boudin is often served simply, perhaps with polenta or boiled potatoes, allowing the sausage’s complex, earthy character to take center stage.

Lo Grand Baou è un posto fantastico a Jovençan dove abbiamo scoperto piatti tradizionali valdostani come il boudin, la polenta e brossa e la loro polenta con Fontina e cipolle, il tutto gustato al sole con una bellissima vista.
