La storia
Lingua, or beef tongue, is a prized cut in Japanese *yakiniku* (grilled meat) cuisine, celebrated for its rich, beefy flavor and unique texture. The dish's origins trace back to global culinary traditions, but its modern popularity in Japan soared in the post-war era, particularly in the Tōhoku region, where Sendai-style grilled tongue became a specialty. In *yakiniku*, the tongue is typically sliced thinly and scored to prevent curling on the grill.
A great version of lingua is distinguished by its preparation and texture. The tongue should be sliced to a precise thickness—neither too thin to lose its chew nor too thick to become tough. High-quality cuts are often sourced from Wagyu or premium beef, and the meat is frequently marinated in a simple blend of salt, pepper, and citrus, or a savory soy-based sauce. The ideal result is a crisp, charred exterior with a tender, juicy interior that offers a satisfying bite without being rubbery.
Regional variations are notable. In Japan, *gyutan* (grilled tongue) is a signature of Sendai, where it is often served with barley rice and oxtail soup. In Latin American cuisines, *lengua* is commonly braised or stewed until tender, used in tacos or as a filling. In Minato City, Japan, Yakiniku Jumbo Shirokane is a renowned venue for this dish. As noted by the creator *Cosa mangiamo oggi?*, the restaurant’s preparation highlights the tongue’s natural flavor, expertly grilled to achieve the perfect balance of smokiness and succulence.
