La storia
Formaggio Erborinato con Funghi is a rustic Italian-inspired dish featuring a blue-veined cheese (erborinato) paired with sautéed or roasted mushrooms (funghi). The term "erborinato" is Italian dialect for "herbaceous," referring to the greenish-blue marbling of the cheese, typically Gorgonzola or a similar aged variety. The dish likely originated in northern Italy, where cheese-making and mushroom-foraging traditions converge, but it has been adapted in modern European cuisine as a hearty appetizer or main course.
A great version balances the pungent, salty creaminess of the blue cheese with the earthy, umami depth of wild or cultivated mushrooms—porcini, chanterelles, or cremini. The mushrooms are often cooked in butter, garlic, and fresh herbs like thyme or rosemary, then finished with a splash of white wine or cream. The cheese may be melted over the mushrooms or served as a crumble on top, sometimes accompanied by crusty bread or polenta to soak up the sauce.
Regional variations exist: in Spain, Entre Brasas in Granada serves a version that highlights local fungi and a milder blue cheese, as noted by *Where The Foodies Go*. In Italy, the dish might incorporate truffle oil or aged balsamic, while in France, Roquefort could replace Gorgonzola. The key distinction of an exceptional preparation is the harmony between the cheese's sharpness and the mushrooms' savory richness, avoiding an overpowering saltiness.

Un posto dove tutti in fila parlavano spagnolo — un buon segno. Offrono un piccolo omaggio col primo giro di bevande, una bellissima abitudine andalusa. La Rubia Gallega era incredibile, e il totale è stato 49,70 €.
